Hawaiian Yam Casserole

Ingredients

medium sweet potatoes or yams, peeled and cut into 1/2-inch slices (about 2 cups) SAVE
1
can (8 ounces) crushed pineapple in juice, undrained
1
tablespoon packed brown sugar
2
tablespoons chopped pecans
1
tablespoon chopped crystallized ginger
1
teaspoon margarine

Steps

    Heat oven to 375°. Spray 1-quart casserole with nonstick cooking spray. Layer yams and crushed pineapple in casserole. Sprinkle brown sugar, pecans and crystallized ginger over top; dot with margarine. Cover and bake about 45 minutes or until yams are tender.
